Pear & Ginger Frangipane Crumble

A healthy crumble recipe. Simply stewed pears, with a low-sugar almond topping enriched with almond essence to taste like frangipane.

  • 75g coconut oil, melted, plus a little extra for greasing.
  • 1 teaspoon almond extract
  • 120g ground almonds
  • 60g flaked almonds
  • 1 Tablespoon coconut palm sugar
  • 2 teaspoons ground ginger
  • ½ teaspoon cinnamon
  • 6 medium sized pears, cored and chopped into bite-size chunks
  • 2 Tablespoons freshly squeezed lemon juice
  1. Preheat the oven to 180C.
  2. First make the crumble. Melt the coconut oil in a saucepan, then add the almond extract.
  3. Mix the almonds, sugar and spices in a bowl and add the melted liquids. Mix with a fork until evenly distributed. Place in the fridge to chill (the coconut oil will solidify as it cools, helping things clump together) while the pears stew.
  4. Put the pears and the lemon juice into a saucepan, cover with a lid and cook gently over a medium heat for 10-15 minutes, until the pears are softened to your preference (I like a mushy crumble).
  5. Grease the bottom of a 7 inch square oven proof dish with a little coconut oil and fill with the cooked pears.
  6. Distribute the topping mixture over the pears and bake until bubbly and golden, about 25 minutes.
Serve with coconut yoghurt, cream or milk.
